For the main course, choose between beef shortribs with truffle gastrique jus, pomme pavé and vichy carrots or black cod with leeks, shimeji mushrooms and soya sole nage. Conclude the evening with a strawberry champagne jelly, topped with ruby chocolate and kaffir lime for a perfect finale.
